Grown by smallholder farmers deep in the Sidama Zone the birthplace of coffee itself. The Indigenous Heirloom Cultivars that grow here have never been engineered for yield or uniformity. They've been left to evolve with their environment, rooted in Nitisol soils at altitudes between 1,700 and 1,900 metres, where the air is thin and the growing season is long.
The natural process does the rest. Each cherry is sorted by hand, then laid on raised beds to dry whole under the Ethiopian sun. As the fruit dries around the bean, it imparts sweetness and depth that no other process can replicate milk chocolate that melts into a fruity complexity, and a caramel finish that lingers long after the cup is empty.
